- 1/4 cup raw pasta
- 1/4 cup cooked red beans
- 3-4 basil leaves

- For the soup: boil tomatoes, blend them, strain them and make a puree. In a pan heat oil. Add celery, and capsicum and saute for some time. Add diced zucchini, carrot, and french beans. Saute for 3-4 minutes. Add crushed garlic and saute for 1-2 minutes. Add tomato puree and saute for 3-4 minutes.


- Now add 3 cups of water and raw pasta. Add salt, black pepper powder, red chili sauce, tomato ketchup, Italian seasoning, and sugar, and stir well. Add basil leaves and cooked red beans. Boil for 10-15 minutes or until pasta is cooked. Delicious minestrone soup is ready.



- For the panini sandwich: cut the onion into slices. Cut capsicum, red bell pepper, carrot, and tomato(remove seeds) in long strips. Cut baby corn into pieces. Heat grill pan or tawa. Put butter. Add all veges and saute for 3-4 minutes. Transfer into a bowl.

- Cool down for some time. Add mayonnaise, periperi sauce, salt, black pepper powder, chili flakes and oregano. If you don't have periperi sauce you can add periperi masala powder. Mix well. Stuffing is ready.


- Now take panini bread or hotdog bun. Cut into two parts. Apply butter to both parts. Spread prepared stuffing and grated cheese over it.



- Close it. Grill on grill pan with butter on both sides. Cut into pieces and enjoy veg panini sandwich with hot minestrone soup.
